low fat recipes for macaroni cheese?

I love macaroni cheese and there's a great article in the Guardian (UK) today on making the perfect macaroni cheese but I want a low cal version. Can anyone help???

I've looked into making cauliflower cheese (low cal version). I've made it before with bechamel sauce and it worked well. I get the Dolmio jar of 'white lasagne sauce' and cook the cauliflower (yet to try pasta with it) in it until soft, then add some tomatoes and a lithgt sprinking of grated cheese on the top and it tastes surprisingly indulgent! : ) The Dolmio sauce isn't too bad on cals actually and tastes better than making your own (or certianly in my case!)

Was going to post this on my blog one day next week, but here's a recipe that I make that my family loves!
3 Tbsp. low fat margarine/butter
3 Tbsp. all purpose flour
1 c light half and half or skim milk (half and half makes it a little creamier)
1/2 cup nonfat plain greek yogurt
2 cups reduced fat sharp cheddar cheese, shredded.
4 oz 1/3 less fat cream cheese
1 clove garlic, minced or grated
1/2 tsp ground mustard
8 oz elbow macaroni (I used Ronzoni smart taste)
Boil the pasta according to directions.
In a medium saucepan, melt butter over medium heat. Add flour, grate in garlic, and stir until well combined, cook stirring constantly for 1 to 2 minutes or until color starts turning a light golden color Wisk in milk (half and half), mustard, and stir until smooth, bring to a low boil, stirring frequently. Add in yogurt, cream cheese and shredded cheese. Remove from heat, add cooked pasta and enjoy!
Makes 8, 1/2 cup servings if using for a side dish (if its your main course, double nutrition info)

Mac n cheese is my ultimate fave dish. Growing up my mum always made it with tomato soup and i never realised this was odd. I adapted it to fit within my kcals. Everyone must try it - so yum! Xx
1tbsp double concentrate tomato puree (13kcals)
200g Weight Watchers - Reduced Fat Mature Cheese (430kcals)
240g Freshly Frozen Sweetcorn (273kcals)
1 can Campbell's - Low Fat Tomato Condensed Soup (135kcals)
Dilute the condensed can with Fresh Skimmed Milk, 100 ml (35kcals)
1 can Heinz - Weight Watchers - Tomato Soup (76kcals)
Wholewheat Pasta Penne, 250 g uncooked (833kcals)
TOTAL: 1808 kcals
4 Large servings: 452 kcals per serving

oh yeah baby, I LOVE the idea of being able to eat a big gooey mess of macaroni cheese without it rappearing on my thighs at next weigh in :laugh: :laugh: :laugh:0 -
A great easy mac and cheese !!!! Low fat and delicious.
Cook your pasta.
Then take 2 of the green giant singles that are the brocoli and cheese or cauliflower and cheese .. I believe they are only 1 point for 1 individual serving.
So microwave those and pour them over your noodles then add 4 wedges of the laughing cow light cheese wedges and mix them in so they melt.
Stir all together and and YUMMIE !!!!!!!!!!!
It was really good. I also added a alittle bit of garlic salt and some pepper to it.

1 can Campbell's Healthy Requests Condensed Cheddar Cheese Soup
1/2 soup can skim milk
2 tablespoons yellow mustard
1/2 teaspoon garlic pepper
1/3 of a 1-pound package Smart Taste rotini pasta (about 1 1/2 cups), cooked and drained
1 tablespoon plain dry bread crumbs
2 teaspoons Smart Balance buttery spread, melted
1.Heat the oven to 400°F.
2.Stir the soup, milk, black pepper and pasta in a 1-quart casserole.
3.Stir the bread crumbs and butter in a small bowl. Sprinkle the bread crumb mixture over the pasta mixture.
4.Bake for 20 minutes or until the pasta mixture is hot and bubbling.
*not sure about the nutrients off hand, but i know this is better than our old mac a cheese, but my kiddos love it!0 -

There is a new tofu shirataki macaroni style, I bet if you replace the pasta with this 20 cal stuff you can have a huge bowl for the above calories with hardly any carbs!0 -
thanks for these guys - will definitely look into these! But tonight I'm going for a standard one - my only concession will be semi-skimmed instead of full fat milk to make the bechamel. I'm going to watch the portion size and I've saved up the calories and then next time I'll be good....0
