How do you handle vacations?

Next week I'm leaving on vacation with my boyfriend to a cabin in the smokey mountains. Does anyone have any good tips for staying on track when you're on vacation? I know we'll be driving about 8 hours and it's very likely we'll have to stop at drive thru's or rest stops. Also since we'll be gone I won't be getting in my regular amount of exercise, although one day we do plan on some hiking. Tips for staying on track would help or even recipes that travel well would be helpful
