My absolute favourite meal right now:
HONEY SOY CHICKEN & SALAD OPEN SANDWICH
boneless chicken breast
1 tablespoon honey
1-2 tablespoons soy sauce
fresh onion sliced (optional)
sliced capsicum (pepper)(optional)
lettuce
tomato
cucumber
grated carrot
any other fresh salad bits you like
lite balsamic vinegarette & lite ranch dressing (or your favourite)
1-2 slices of your fav multigrain bread
Optional: cream cheese, sunflower seeds, pumpkin seeds, chopped nuts
Pop honey in microwave for 20-30 secs until melted, Add soy sauce and stir. Add sliced chicken breast. Heat a non stick pan - pop in the chicken mixture ... add onion and capsicum if you like. I sometimes toss in some frozen corn kernals too :-). Cook to your liking... if you cook longer rather than shorter the honey almost seems to caramalise. Toast bread and pop on plate. Spread with cream cheese if desired. Toss on lettuce, chopped tomato, cucumber, grated carrot and any other fresh veges/sprouts you have. Add a splash of vinegarette and dressing. Lightly sprinkle with seeds and nuts if desired... .pop your warm chicken mixture on top. ENJOY. This is really quite filling as it takes a while to eat :-) You can also substitute the chicken for marinated beef.

and my sweet dish:
CARROT CAKE IN A MUG - less than 5 minutes! (about 240ish CALORIES per serve - recipe is for 2 serves)
Use a LARGE mug... or a wee jug
6 Tablespoons flour (I use wholemeal but white works as well)
2 Tablespoons sugar (brown or white depending on your taste)
1/4 teaspoon baking soda
1/8 teaspoon salt
1/4 teaspoon cinnamon (YOU MIGHT LIKE TO ADD MORE CINNAMON/NUTMEG ACCORDING TO TASTE)
1/8 teaspoon nutmeg
mix dry ingredients up with a fork then add
4 tablespoons orange juice OR milk or buttermilk (all work!)
2 tablespoons of oil OR 1 tablespoon oil, 1 tablespoon low fat sour cream
1/4 teaspoon vanilla
3 tablespoons finely grated carrot
1 tablespoon chopped nuts OPTIONAL
1 tablespoon raisins or sultanas (OPTIONAL)
Mix well... pop into microwave for 2.5-3.5 minutes
Serves 2-3 - drizzle with honey or have with light vanilla ice cream0 -

MEAL: Waldorf Salad with yogurt lemon pepper dressing
lettuce
1/2 green apple, cubed
1/2 cup red seedless grapes, halved
10g candied walnuts (I candy my own with Truvia...just a bit of water in a pan over medium heat)
2 tablespoons dried cranberries
For the dressing:
2oz Fage 0% greek yogurt
1 tbsp lemon juice
pepper to taste (I put it in until it almost looks like ranch :P)
SWEET: Pumpkin spice muffins
1 box spice cakemix
1 can (28oz) PURE pumpkin filling (not pie filling)
Mix it and put it in the ocean according to directions. No need for oil, water, or eggs!
Also, pumpkin spice cream cheese (idk, if this is considered a sweet....but it is to me!)
1 8oz container philedelpia whipped cream cheese
1/2 cup pure pumpkin filling
1 1/2 tsp pumpkin pie spice
1 tsp vanilla extract
56 calories for 2 tbsp serving (makes 10 of those)
mix and use as a dip or have it on your bagel (Thomas' have 110 calorie bagel thins that are really good)0 -
