vegan thanksgiving ideas?

this is my second year of not having turkey for thanksgiving, this year I made something more festive. I would love to hear your favourite "holiday" recipes. here's mine

stuffed pumpkin
1 medium pumpkin
2 tbsp olive oil
2 yellow onions
1 clove garlic
7 cups vegetable stock
2 cups wild rice
2 cups basmati rice
2 cups dried cranberries
2 cups walnuts
1/2 cup chopped parsley
2 tbsp thyme

heat oil, cook onion for about 5 minutes, add garlic for 1 more minute
add vegetable stock, bring to boil
add wild rice, simmer for 45 minutes
add basmati rice, simmer for 15-20 minutes
add remaining ingredients, stir well, simmer 5 minutes

cut pumpkin in half, scoop out seeds, fill each half with stuffing (as if it were a casserole dish). cover with tin foil and bake about 30 minutes or until the pumpkin is tender.
