So, I made this soup today and it came out very yummy. Thought I would share. It is quick and easy.
3 cups chicken broth (I used 99% fat free)
11 oz V8 juice (I used low sodium)
I lg baking potato (peeled and cut up)
1 can diced tomatoes
3 celery stalks (cut up)
1 can of corn (I used no salt added)
1 can green beans (no salt added)
1 can peas (no salt added)
Salt and pepper to taste
Creole seasoning to taste
Put everything in a pot and bring to a boil. Turn down the temperature and let it simmer for 30 minutes.

No problem. You could use fresh veggies or frozen. I just used what I had on hand.0
