Reduced Fat/Low Sodium (And Tasty!) Banana Bread

I adopted a decadent Taste of Home recipe for banana bread last night (had a couple of ripe bananas at the end of their usefulness) to great effect! Here are the health numbers:
Per 1 ounce of bread:
99 calories
17 g carbohydrates
3 g fat
1 g protein
37 mg sodium
8 mg cholesterol
INSTRUCTIONS:
(1) Cream 6 tbsp. unsalted butter (softened), 8 tbsp. light cream cheese (softened), and 1 cup sugar.
(2) Beat in 1/4 cup egg substitute or equivalent volume of egg whites.
(3) Beat in 2 mashed bananas and 1/4 tsp vanilla extract
(4) Prepare dry mix of 1 1/2 cups whole wheat flour, 1/4 tsp baking soda, and 1/4 tsp baking powder
(5) Mix dry ingredients with wet ingredients
(6) Fold in 1 cup of raisins. (I used golden raisins...the nutritional numbers will change if you go traditional and mix in nuts...my 5 yo is allergic to all nuts so I went the raisin route!)
(7) Transfer mix to a greased (I used olive oil cooking spray) loaf pan and bake at 350 degrees F for 1 to 1.25 hours or until toothpick comes out clean. (I only needed an hour and I'm at 4500 feet.)
Slice and eat as you will! My loaf came out to 30.5 ounces and I used that (and my specific ingredients) to determine the nutritional info above. Send me a personal message if you want other nutritional info...I only listed those things that I track for myself but can get other numbers if you are interested.
Made some scrambled egg whites and had a slice of this bread (3.25 ounce slice) with 1 tbsp. light cream cheese this morning for a 457 calorie breakfast (56% carb/24% fat/20% protein) with only 458 mg sodium. :bigsmile:
