My favorite salad!

3 cups of spinach or spring mix
1 cup of strawberry slices
1/4 cup of sliced almonds
1 oz of goat cheese

Drizzle with olive oil and balsamic vinaigrette & enjoy!

I eat this for dinner about once an week and it's filling but low calorie. I have even added half a cup of rinsed black beans for extra fiber and it was just as good :)

    That does sound yummy (but I'd go with raspberries over strawberries :laugh: )

    Today I am having for lunch:

    3 cups of roughly chopped romaine
    3/4 ounce (21 grams) of low fat blue cheese crumbles
    1 hard boiled egg, sliced
    2 ounces cucumber slices
    1 Roma tomato, sliced
    1 tablespoon of Newman's Organic Balsamic Vinaigrette

    206 calories, 8 net grams of carbs, 4 grams of fiber and 13 grams of protein

    GAH. I used to make that during the summer :D I also would add some chicken
