I have Tofu and Red/Green Bell pepper to cook

What can I make besides a stir fry?

    Do you have anything else? You could stuff the peppers with the tofu and other veggies/brown rice/quinoa/something...

    Maybe cook the tofu with quinoa, garlic, onion and you can stuff the peppers?

    I dunno what other ingredients you have lying around, but what about stuffed peppers? A quick google search had this at the top http://allrecipes.com/Recipe/tofu-and-rice-stuffed-peppers/detail.aspx but that is only veggie, not vegan. Are you vegan? I can have another look around if you like? xx

    If you also have some type of leafy greens on hand, cube the tofu and soak it in low sodium soy sauce for a bit, then toss it in corn starch and fry it. Slice the peppers and toss with the greens and tofu cubes for a yummy salad.

    You could also scramble the tofu (just like scrambled eggs) and add diced peppers.

    Or, if it's silken or soft tofu (I assumed firm) you could season it and use as a dip for the peppers or spread for a wrap.

    I like cutting them into strips and eating them raw with some homemade tzatziki - use fat free greek yogurt and you get some good protein in there, too.

    My favorite thing to do with bell peppers, though, is to roast them. Stick them under a broiler (or on an open flame if you have a gas stove) and rotate them until the skin is completely charred. Then stick the whole thing in a plastic bag for a few minutes - the skin will separate from the flesh and you can just brush it right off. Cut it into strips for sandwiches/paninis/salads/etc. SO GOOD.

    OK OK, I made somewhat of a stir fry! And it turned out SOOOO YUMMY!

    Trader Joe's - Organic Firm Tofu
    Trader Joe's - Baby Spinach
    Bell Pepper - Red
    Bell Pepper- Green
    Mr. Yoshida's - Sweet Teriyaki Original Gourmet Marinade and Cooking Sauce
    Kikkoman - Teriyaki Marinade & Sauce
    Trader Joe's - Reduced Sodium Soy Sauce
    Trader Joe's Organic - Premium Extra Virgin Olive Oil



    Cube tofu, fry in olive oil
    Add cut up bell pepper
    Add Baby spinach
    Add sauces and saute until preferred level of cooking!
