.... to recipes? lol
I used to live and die by them but when I met my fiancee (a chef) I felt the need to show off with out them and at first I was horrible at it :ohwell: buut eventually, I got pretty good at it. However, I also have put quite a bit of weight on (hmm I'm guessing cuz I tend to over do portions and/or add more of things I like, and I am a big carb person unfortunately lol) Recently, I have been buying premade meals to keep my portions in check better but now I miss cooking....
Problem is, everytime I see a recipe (even a short, easy, quick one) these days, it just makes me feel overwhelmed. :blushing:
Tips?

Just do it!
Preferably on a day when you aren't feeling rushed.0 -
Best thing to do is separate the recipe into sections. That's what I do!
Like:
Meat item 1
Meat item 2
Dairy item 1
Water/broth/liquid 1
Starch/grain/bean 1
Starch/grain/bean 2
Vegetable 1
Vegetable 2
Vegetable 3
Spice 1
Spice 2
Spice 3
Spice 4
Spice 5
Then, when you're about to actually cook, do it mise en place style ("everything in place") with little bowls and plates of all your ingredients. That way, everything is unboxed and pre-portioned per the recipe before you even start!0 -
Stick with what you're used to. Read the recipe (or a few) for the general idea, and a rough idea of measurements, then ditch it and cook by the seat of your pants. That's how I roll (my dough).0

Thanks everyone
Now if only I could make meat defrost super quick (i don't like doing it in the microwave, the outside usually gets semi cooked or hard before the inside defrosts- ew) lol0 -
You're def not supposed to defrost in the microwave. XD
Put it in the fridge the day before.0
