Need Easy Freezer Meal Ideas

I need some ideas for easy freezer meals that are around 500 or less per serving. I am extremely busy during the week but love to have healthy home cooked meals. Therefore, I make my healthy homemade meals ahead of time and freeze them, so they are easy to pull out, thaw, and cook. Any ideas would be awesome. Please no ideas that you haven't frozen before; I have run into some meals that don't really freeze very well.
Thanks fellow mfp friends!

Pancakes, from scratch... I add protein powder to mine. (if Aunt Jemima can freeze hers for a year mine are good preservative free for 6 months)
Lasagna cupcakes
Mac N Cheese, Goulash
Shepherds Pie
Hamburger Casserole
Chili
That's for starters, and all that IS in my freezer now0 -
I think any soup is freezable... skinnytaste.com has some great recipes. Just made the acorn squash with leeks and it was super yummy! You also can make meals a head of time and not have to freeze them salads are a super fast and easy meal. Turkey wraps with some honey mustard... stir trying veggies is also super fast, easy and healthy.
Hope this helps0 -

Right now I have some of these frozen in my freezer. These are nice because you can pull them out of the freezer bag a few at a time and heat them up as necessary. I froze mine without the sauce- I would definitely recommend freezing them WITH the sauce. Heating them up with the sauce will keep the shells moist.
Have you thought about making soup and freezing it in baggies? I have frozen vegetable soup before and it worked well, and this week I was planning on making a soup with diced tomatoes, chiles, chicken broth, leftover rotisserie chicken, cilantro, carrots, and garlic and freezing individual baggies of it.
Good luck!0 -

lasgna cupcakes? care to share?
also, looking for a lower calorie shepherd's pie, care to share that too?0 -
If freezing soups in baggies it can help to have an old 2L milk jug with the top cut off, it "forms" the soup into an easy to stack / store shape so you can perhaps fit more soup into the freezer space you have, freeze it in the baggie in the jug for form, once frozen it can come out. Same with lasagna etc if you want to freeze it, line the pan with aluminum foil, wrap the food entirely in foil, freeze, then you can remove it from the casserole dish freeing up the dish to make another meal while that other one is still in the freezer. Mom had a dozen casserole dishes because she left them in the freezer, I have twice as many casseroles frozen and only have one casserole dish0

Make a big pot of soup every weekend!!
Soup is easy, and usually low in calories (if they are not the cream kind)!
I also really like the Voila! frozen bagged meals (comes with everything) they are 2 servings each, tastes like home cooking, AND, only 240 cals a serving! Nice to have with a big salad!0 -
This freezes well: I don't use the amount of butter she recommends and add almond milk (also 1 baked sweet potatoe to the cauliflower.

http://www.myfitnesspal.com/topics/show/155887-lasagna-cupcakes is the lasagna cupcake recipe thread I used.
Shepherds Pie just cut replace half the potatoes with cauliflower or use some sweet potato!0 -
I love the soup ideas except for my husband doesn't like soup! Thanks so much for the ideas though. I'll definitely try the lasagna cupcakes though. Those sound yummy!0

Then... He can starve?? lol. Or at least fend for himself! (Kidding......... kind of)
How can someone not like soup??0 -
Ya, sometimes I make him fend for himself but for the most part, I like to serve a hot healthy meal that we both enjoy. Any more ideas would be appreciated!! Thanks!!!0
