The week before a long bike ride

I'm set to do a 40 mile bike ride on Saturday and I'm wondering if anyone with experience doing long rides can give me some insight into training the last week. How much rest should I get?
Right now my plan is:
Yesterday - Plyometrics
Today: Long ride on stationary bike (about 30 miles)
Tomorrow: Stretching only
Wednesday: Long ride on bike
Thursday: Shorter ride (8-10 miles)
Friday: Off day to drive up
Saturday: Event
Is this too much training the week before?

I think when I do a couple of short intense rides and get some "wind sprints" in on it, I have more strength and endurance. Take at least one or two days off before the ride. And...Eat a good spaghetti with meat sauce dinner the night before.0
