I got sent a lot of apples form my uncle from up in NY. There is sooooo many of them!

Anyone have some good apple recipes?

    Cinnamon Apple Crisp

    For the Filling:
    5 medium apples, peeled and diced
    1.5 oz raisins (small box)
    1/2 tsp cinnamon
    1/2 lemon, juiced
    3 tsp cornstarch
    1/4 cup agave nectar
    For the Topping:
    1 cup Quaker quick rolled oats
    1/3 cup whole wheat flour
    1/2 cup light brown sugar (not packed)
    1 tsp cinnamon
    1/4 cup (half stick) butter, melted

    Directions:
    Heat oven to 375 degrees. Combine apples, raisins, cinnamon, agave nectar and lemon juice in large bowl. Sprinkle with cornstarch. Toss until fruit is coated. Place fruit in an ungreased baking dish.

    Mix remaining ingredients. Sprinkle over fruit. Bake about 40 minutes or until topping is golden
    brown and fruit is tender.

    Serve with a scoop of low fat ice cream or fat free frozen yogurt. Enjoy!!

    I have a recipe for homemade applesauce in the crockpot. I have not tried it with less sugar though. Now that I am trying to lose weight though I will need a low sugar version.

    I usually use 6 -8 medium apples, cored, peeled and sliced thin. I put them in the crock with 1/2 C water, 1/3 C sugar (I use raw) and about 2 tsp of cinnamon. Cook on low 6 hours, then mash with a potato masher. It makes a chunky sauce that I like. You don't have to use the cinnamon, but I like the taste.

    It makes the house smell real good. I have not checked the amount of calories or carbs that would be. It makes a pretty large batch for our family.

    Apple Strudel
    Golden raisins and crisp McIntosh apples make up the filling in this strudel dessert recipe. Store-bought phyllo dough makes prep easy and yields a delightful flaky pastry.


    YIELD: 8 servings (serving size: 1 (3-inch) slice)
    COURSE: Desserts, Pies/Pastries
    Ingredients

    4 ounces day-old French bread or other firm white bread, coarsely chopped
    3 tablespoons butter, divided
    5 cups finely chopped peeled McIntosh apples (about 1 1/4 pounds)
    1 cup sugar
    1/2 cup golden raisins
    1 teaspoon ground cinnamon
    8 sheets frozen phyllo dough, thawed
    Cooking spray
    Preparation

    Preheat oven to 375°.

    Place bread in a food processor, and pulse 10 times or until coarse crumbs measure 1 1/4 cups.

    Melt 1 tablespoon butter in a large skillet over medium-high heat; add breadcrumbs. Cook 4 minutes or until lightly browned, stirring frequently. Combine breadcrumbs, apples, sugar, raisins, and cinnamon in a medium bowl; toss to combine.

    Lightly coat each of 4 phyllo sheets with cooking spray, placing one on top of the other. Cover with plastic wrap, pressing gently to seal the sheets together; discard plastic wrap. Spoon 3 cups apple mixture along 1 long edge of stacked phyllo, leaving a 2-inch border. Fold short edges of phyllo to cover 2 inches of apple mixture on each end. Starting at long edge with 2-inch border, roll up jellyroll fashion. (Do not roll tightly, or strudel may split.) Place strudel, seam side down, on a jellyroll pan coated with cooking spray. Repeat the procedure with remaining phyllo dough, cooking spray, and apple mixture.

    Melt 2 tablespoons butter, and brush over strudels. Bake at 375° 25 minutes or until golden. Cool on a wire rack 20 minutes before serving.

    Caramel-Apple Crumb Pie
    This Caramel-Apple Crumb Pie is a variation on the classic apple pie; it has a rich caramel syrup drizzled over the apples and is topped with a crunchy streusel.


    YIELD: 10 servings (serving size: 1 wedge)
    COURSE: Desserts, Pies/Pastries
    Ingredients

    Crust:
    1 cup all-purpose flour
    1/8 teaspoon salt
    2 tablespoons chilled butter or stick margarine, cut into small pieces
    2 tablespoons vegetable shortening
    3 tablespoons plus 1/2 teaspoon ice water
    1 teaspoon cider vinegar
    Butter-flavored cooking spray
    Filling:
    1 tablespoon butter or stick margarine
    1/2 cup packed brown sugar
    3/4 teaspoon ground cinnamon
    9 cups sliced peeled Granny Smith apple (about 2 3/4 pounds)
    3 tablespoons all-purpose flour
    2 teaspoons lemon juice
    Topping:
    1/4 cup all-purpose flour
    1/4 cup packed brown sugar
    2 tablespoons chilled butter or stick margarine, cut into small pieces
    1/4 cup fat-free caramel sundae syrup
    Preparation

    Preheat oven to 375°.

    To prepare crust, lightly spoon 1 cup flour into a dry measuring cup; level with a knife. Combine 1 cup flour and salt in a bowl; cut in 2 tablespoons butter and shortening with a pastry blender or 2 knives until mixture resembles coarse meal. Sprinkle surface with ice water, 1 tablespoon at a time; add vinegar. Toss with a fork until moist and crumbly (do not form a ball).

    Press mixture gently into a 4-inch circle on heavy-duty plastic wrap; cover with additional plastic wrap. Roll dough, still covered, to a 12-inch circle. Freeze 10 minutes or until plastic wrap can be easily removed.

    Remove 1 sheet of plastic wrap; fit dough into a 9-inch pie plate coated with cooking spray. Remove top sheet of plastic wrap. Fold edges under; flute. Line bottom of dough with a piece of foil; arrange pie weights (or dried beans) on foil. Bake at 375° for 15 minutes or until the edge is lightly browned. Remove pie weights and foil; cool on a wire rack.

    To prepare filling, melt 1 tablespoon butter in a large nonstick skillet over medium-high heat. Combine 1/2 cup brown sugar and cinnamon. Add sugar mixture and apples to skillet; cook 5 minutes, stirring occasionally. Remove from heat; stir in 3 tablespoons flour and lemon juice. Spoon into prepared crust.

    To prepare topping, lightly spoon 1/4 cup flour into a dry measuring cup; level with a knife. Combine flour and 1/4 cup brown sugar in a bowl; cut in 2 tablespoons butter with a pastry blender or 2 knives until mixture resembles coarse meal.

    Drizzle syrup over apple mixture; sprinkle topping over syrup. Bake at 375° for 30 minutes or until apples are tender. Cool on a wire rack.
