I am having a baked potato for lunch, but what can I top it with?

    Chili is my favorite thing to put on a baked potato. I have heard of people using salsa but haven't tried it myself.

    You could do chives, onions, tofu bacon (or whatever the stuff is called), maybe even sunflower seeds... just for a difference of texture.

    I microwave mushrooms, peppers and onions with no oil, just soften them slightly, yum!

    Ketchup & malt vinegar

    Peas, mushrooms, (or whatever) and BBQ sauce

    Scoop out the inside and mash with plant milk & garlic. Put it back in the skin to serve.

    Curried cauliflower and broccoli

    Mushroom gravy

    Sauteed onions & malt vinegar



    My favorite is just ketchup!

    I'm having a baked potato for lunch today too. I bought some vegetarian chili to put on top of mine. I've not tried that before, so I'll see if I like it. Enjoy your lunch, whatever you decide to put on it. :smile:

    Vegetarian chili is great on a baked potato. Forgot about that one. Red Star Nutritional yeast plus a little water is also great. Adds protein and B12 for 60 calories - and makes it like a cheesy baked potato!

    I have tuna with low fat mayo its wicked.

    I also like baked beans with a little cheese on top.

    And if im feeling extra hungry i like a little chilli con carne on it :D
