    I had this a few nights ago, found it in Muscle & Fitness Hers, I also added some chopped up mushrooms, it was FABULOUS!


    Greek Roasted Tilapia Fillets - 2 servings

    Pam/cooking spray
    1 1/2 tbsp minced garlic
    1 tsp evxtra virgin olive oil
    1/3 c chopped fresh flat leaf parsley
    2/3 c seeded and chopped Roma tomatoes
    1 3/4 oz (about 1/3 c) reduced fat feta cheese, crumbled
    1/2 lb tilapia fillets, bones removes
    Salt and pepper

    Preheat over to 400.
    Mist a medium ovenproof baking dish with spray.
    Mix garlic, olive oil, parsley, tomatoes, and feta in medium bowl.
    Mist both sides of tilapia fillets with spray then season with salt and pepper. Lay fillets side by side, barely touching, in baking dish. Top evenly with tomato mixture. Bake for 13-17 minutes, or until the tilapia flakes and is no longer translucent. Serve immediately.

    I always just squeeze lemon and lime over it with a tiny bit of pepper and garlic.

    Agreed with lemon, butter, and peppercorns :)

    I used to get tons of tilapia because its cheap and pretty awesome for you. Once its cooked you can flake it up and mix it with salsa to make filling for fish tacos, quesadillas, burritos, etc. Just add a dash of sazon and some cheese.

    You can also take ordinary yellow mustard and smear the fillet with it, about 1.5-2 teaspoons. Then add a touch of butter/substitute and bake.
  • Tandoori-Style Tilapia

    Ingredients:
    2/3 c. plain yogurt
    1 tsp. chopped garlic
    1 tsp. grated ginger
    1/2 tsp. curry powder
    1/2 tsp. nutmeg
    1/2 tsp. cumin
    fresh hot chilies to taste
    salt and pepper to taste

    Cooking Instructions:
    Combine all ingredients, mix thoroughly. Rub on both sides of the fish and bake at 400° for 10-15 minutes

    **This recipe comes on the box of Coleson's catch frozen tilapia. I've made it numerous times and it is wonderful! It goes great with brown rice with a splash of lemon juice. You can also use this mixture on chicken.
  • I usually bake mine in the oven with a little olive oil drizzled and spread on them. (400 degrees for about 10-12 minutes) While they are baking, I sautee bell peppers, sweet onions and mushrooms with pam and a teaspoon of olive oil. When the fillets are done, I cover them with my sauteed goodies and chow down. I usually have a salad with it. Sometimes I put it over a cup of cooked rice, but only if I have calories to spare.
