What are your veggie tips to enhance nutrition on a plant based diet?

    eat fresh and a variety. they lose a lot of nutrients when cooked. spinach has a lot of iron, leafy greens and brussle sprouts have a lot of calcium. this is just stuff i know off the top of my head.

    Beans, beans, beans. Cruciferous veggies. Hummus (aka bean dip). Soy (for iron). And lots of grains.
