Fall Veggie Chili

I've been exploring more meatless recipes and came across this one.

Turned out extremely tasty. Didn't miss the meat at all. I tweaked it a bit and it came out to about 340 calories per serving. Very filling too. I made biscuits to go with it but it really wasn't needed. Here's the changes I made:

I used 3 carrots and 3 parsnips instead of 2.
I used a can of diced tomatoes instead of whole.
I used 2 cups of Vegetable Broth instead of water for more flavor.
I added 1 5oz can of tomato paste.
I added 2 cloves of minced garlic.
I added 3 Celery Stalks.
I used a Tbl of dried cilantro instead of fresh.
I threw it all in the crockpot on low for 6 hours-ish.

Made enough for about 6 servings.
