Peanut Butter Crunch Cookies

I have found this rather delicious looking recipe for peanut butter crunch cookies, ay 140 calories each they are not asolutely awful calorie wise but i just wondered if there was any substitutes i could use to make the calories lower?
I like to bake a lot but don't know much about making things 'healthier' although i am aware there isn't alot that is healthy about cookies....
Serves: 24-26 cookies
75g salted peanuts
125g crunchy peanut butter
125g butter (at room temperature)
75g unrefined caster sugar, plus a little extra for rolling the biscuits
100g light soft brown sugar
1/2 tsp vanilla extract or essence
1 egg
175g plain flour
1/4 tsp bicarbonate of soda
2 large lightly oiled baking trays

You can change mostly all of those ingredients or just some! Maybe check out how many you can change without compromising too much on the taste! Let us know how you go!0 -

Thanks! I'll have a think and probably give them a try tomorrow night or next week! I think they will be freezable too so i could bake half and bake the rest the next time0 -
also use just the egg white..saves a few cals! :flowerforyou:0
