Curried Millet Stew - Clean Eating Recipe (makes 10 cups)

Could not be any easier - Just toss it all into the slow cooker and set it to low for 8-10hours. Since the recipe is GF, vegan and very unbalanced in terms of macros, I serve mine with a protein. Enjoy it however you like! :bigsmile:

Curried Millet Stew (10 cups total - I call this 5 large servings, but eat however much you like!)

2 medium onions, sliced
2 medium carrots, chopped
2 cups frozen corn
1 Tbsp curry powder
1/2 Tbsp garlic powder
2 tsp garam masala
1/2 cup dry millet
1/2 cup dry garbanzo beams
1 tetra-pack no salt added broth (approx 3.8cups) - any broth you like!
1/2 - 28oz tin diced tomatoes, low sodium or no salt added (or tomato sauce/fresh tomatoes)
1 cup coconut milk (light if you prefer)
