Eggplant Parm!
Oh man, I made the most incredible eggplant parm tonight and it was soooooo easy. Here's the recipe:
Ingredients:
1 large eggplant
1 large zucchini
Low fat Mozzarella
Parmesan Cheese
Olive oil spray
low sodium cheap *kitten* tomato sauce from the grocery store
1/4 cup red wine
1/4 diced white onion
Fresh basil leaves
3 cloves garlic
salt
preheat oven at 410 degrees.
First slice the eggplant and zucchini in slices that are about a quarter inch. Lat them down on paper towels and lightly salt both sides to leech out some of the water. Cover in paper towels or dish towels and let sit for about 2 minutes.

Over very low heat put the cheap *kitten* tomato sauce in a sauce pan add the red wine, garlic, and white onion. I added some salt too as the tomato sauce i bought had no salt added at all. Put on VERY low heat, like just below a simmer.
Spray a baking sheet with spray-able olive oil lay the veggies down on the sheet add another spray toss a bit of salt over the veggies. Leave in the oven for about 25 minutes but keep an eye on it so that it doesn't burn. after they look nearly done remove the pan. Flip the veggies over with a spatula. Spoon a small amount of sauce on each slice. Put some sliced basil and a bit of Parmesan cheese on top of that. Put a small amount of mozzarella cheese on top. Put the pan on the top rack or in the broiler for a couple of minutes until it looks done to you.
