Hearty Quinoa Chili

Quinoa,Tomatoes and Black beans- Or Hearty Vegetarian Quinoa Chili
1 tbsp Olive oil
1/2 Cup Quinoa- uncooked
3/4 cup water or chicken broth
1 onion-small dice
1/2 cup mushrooms-sliced
2 cloves garlic-minced
dash of pepper
1 tbsp Cayenne or cajun
1 tsp oregano
small shot of lime juice
1/4 cup fresh cilantro
1 Can italian diced tomatoes
1 can Black beans- well rinsed and Drained

In a pot, Sautee the onion, garlic and mushrooms til the onion is tender(5-7 minutes) Add the canned tomato, water or chicken broth, the spices and the quinoa. Simmer til the quinoa is cooked( 15-20 minutes)
Add the black beans and cilantro, let heat through(5 minutes)

1 Cup is 218 calories, 10 Grams of Protein and 8 Grams of Fiber!.

  • YUM! I have two boxes of quinoa in the pantry I should probably use up. I wonder if squash would taste good as an addition to this. lol I bought some and need to use it up!

  • Bump! I made a quinoa dish tonight and my husband was in shock...apparently he had never heard of quinoa before and he can't decide if he likes it or not. Hopefully this dish will change his mind! Thanks for the recipe!
