Quinoa Lasagna
1 can diced tomatoes(low sodium) or 4 roma tomatoes, chopped
1 lb hamburger or veggie burger or Ground Lean Turkey
2-8 oz cans tomato sauce- Low Sodium
3 cups quinoa, cooked
1/4 lb mozzarella cheese, Low Fat
1/4 cup or less olive oil
1 tsp salt ( I don't add this)
2 tsp oregano
1 cup onion, minced
1/2 lb ricotta cheese( light or Light cottage cheese)
2 cloves garlic, minced
Sauté onion and garlic in olive oil until browned. Add hamburger, cook until browned. Add tomato sauce, tomatoes, salt and oregano. Simmer. Preheat oven to 350 degrees. Put layer of this sauce in bottom of 13x9x2-1/2" baking dish, following with layer of quinoa and layer of cheese. Repeat two more layers ending with sauce an extra mozza on top. Bake about 35 minutes. Serves 6-8.
This one is great to add veggies to. Add all the veggies you love like mushrooms, peppers, even grated carrot. Just sautee it the same time as the onion.
Also for all teh cheeses use Light. and low sodium tomatoes are great.
Some people take zucchini and slice it long and thin and use it like lasagna noodles but thats not my kind of thing.

long slice of eggplant work at this too! yum!
(hint for those averse to the bitterness of eggplant, buy the "males" with fewer seeds, looking for a dime shaped discoloration indent near the stem instead of the oblong trait of the female veg, then coat slices with coarse salt and let sit in a colander for a 10 mins or so, then rinse with cold water, and voila!)

That sounds really good, quinoa is my favorite grain. Do you know if this can be frozen? I could see myself make a lot of it with with all the different options (zucchini, eggplant)0

Just wanted to thank you for this recipe -- I made with a few tweaks and love it!
Definitely a keeper -- I added a bunch of mushrooms, zucchini, carrots, greek yogurt and no cottage cheese.

It Freezes Great!. I love putting it in Portion Size containers and just popping it in the oven when i get home from work!,
