Ideas for preparing dry and canned beans....

Hi there! I am looking for some ideas for preparing dry and canned (not green) beans...without adding too many calories. I want to start incorporating them into my diet but don't know what to do with them. I am a vegetarian and do not eat any meat.

  • I make a curry base then add beans (whatever I fancy), celery, mushroom, kohl rabi, choux choux (excuse the spellings!) and mixed veg to bulk it up... One serving from my last batch was 232cal per serving.

    I like to rinse low sodium canned black beans, sweet corn and, sometimes, chickpeas, to a cold salad (lettuce, tomatoe, cukes, black olives, jalapenos and/or pepporcini ... whatever you like) to make it "southwestern" .. use salsa and/or taco sauce in lieu of dressing to keep it low cal ... use veggie shreds (soy cheese) and wah-la ... easy - filling - low-cal salad .. Not really a "cooking" recipe, per se, but it does get beans into my diet.
  • Just had a "bean party" here yesterday in my kitchen. :) I soaked and cooked and packaged up tons of beans. I keep them in about 2 cup amounts in the freezer-you could use special bags but I just use sandwich baggies. I do black beans, cannellini, kidney, pinto, garbanzo, sometimes others. It's so much cheaper than canned beans (which aren't even really expensive anyway.) I use them to make soups, chilis, black bean burgers, I put 1/4-1/2 cup on my salads, add to salsas, puree for a hummus type dip... does that help?

    Some supermarkets sell a "soup kit" of prepackaged vegetables that you can toss in with some of your beans. My sister did this with black beans. It was actually quite tasty! For seasoning, you can use salt & pepper or get more creative and add things like dill, thyme, rosemary, etc.
  • I stuff peppers with black beans and polenta, top with salsa and cheese. I make crushed garbanzo beans with taco seasoning into tacos (having this tonight) And I make southwestern bean and rice soup with broth, lots of cut up veggies like celery, and carrots, cumin, and onion. I am going to try white bean chili soon, oh, and edamame for snacking and I top all my salads with a 1/4 cup of any beans in the salad bar. :-)

  • I like Luck's *Naturally Fat Free* Pinto Beans. I just place them in a paper towel covered bowl, microwave them and when finished I add some hot sauce. They are very filling, have a lot of protein and fiber & they taste great. The only draw-back is they are a little high in sodium. Takes 2 minutes.

  • It's called "Mudungo". It is a variation on a Native American dish.

    Cooked ground turkey, drained (1/4 lb?)
    Add a large can of kidney beans with juice
    Add a can of hominy with juice
    Add a small can or two of Ortega chiles, with a bit of the juice to taste

    Simmer a few minutes and eat. Yummy!

    Lentil soup is one of the fastest, easiest and tastiest dishes. One quart of vegetable stock to one cup brown lentils, plus onions, thyme, garlic and a dsh of cumin. I puree half of the soup when it's cooked, then add mushrooms or spinach and cook a little longer. .
