I find that I don't have enough calories at the end of the day, my goal is 2560 and I usually get around 1500-1800 cal a day. minus the 600 or so from my daily workout. Anyone have any tips?

Eat real food, nothing "diet". Eggs cooked in oil or butter, cheese, protein shakes made with milk, bananas, read meat, real salad dressing, cheese on salads. I eat about 2200 calories a day and I'm a woman...0

i had 990 calories left to eat today at 10 pm... so i enjoyed myself some cold stone creamery0

I eat almonds as a snack - they are higher in calories and good for you too (though my favorite is chocolate almonds - which I'm sure defeats the "good" part of the almonds! LOL).
You can also try going back to "regular" foods - like regular salad dressing, regular milk, regular cottage cheese, etc.
I consume 2200-2500 net calories a day and I do it by adding back in some of those things (and my almonds, of course... lol)0 -
Nuts
Olive oil on your salads
Straight up coconut oil (good for you too)
Cheese (good protein too)
Pizza mmm yum
Nothing wrong with some dessert too!!0 -
Pasta & potatoes...0

You could try protein bars or shakes for some extra calories, or just calorie dense foods like nuts, bananas, peanut butter, avocados, breads, etc. Those foods are filling and pack in some good calories with some of the good fats. Good luck!0

Protein shake:
1 cup of Half & Half
1 scoop of Whey Protein (Vanilla)
1/2 box of sugar-free instant pudding (banana cream, butterscotch, cheesecake)
1 oz of Sugar-free syrup (like you would use to flavor coffees)
Nutrition from my daily diary:
Darigold - Half & Half, 16 Tbsp 320 8 24 8
Muscle Milk - Whey Protein Powder-Vanilla, 1 rounded scoop 130 2 2 27
Jell-O - Sugar-Free Fat-Free Instant Pudding Powder 50 12 0 0
Da Vinci Gourmet Syrups - Sugar Free - Butter Rum Syrup, 2 Tbsp (1 fl oz) 0 0 0 0

This is a good post-workout mix of all three energy sources to help you rebuild, and it tastes FANTASTIC!0
