Looking for Easy, Low-Carb/Gluten Free Recipes

So, I'm really not much of a cook, but I would really like to learn how to make a few low-carb/gluten free meals at home so I can avoid going out to eat, or having to buy something.
I'm gluten intolerant, but can handle mild gluten intake, and I'm trying to lose weight and feel like no carbs or low carb would significantly help me out.
My husband likes to eat anything and everything you put in front of him, but if I use the "H word" (otherwise known as healthy), he refuses to eat it.
So if anyone has some tasty, healthy recipes that might fool him into eating it, I would greatly appreciate it.

Casserole:
1 lb bulk pork sausage
1 onion, chopped
2 garlic cloves, minced
6 c cauliflower, chopped
6 eggs, beaten
1 c Parmesan cheese Preheat oven to 350°. In a large skillet over
med-hi heat, cook sausage until done, 5-7
min. Remove sausage to bowl; drain all but 1
T fat from skillet. Add onion & garlic to skillet;
cook 2 min. Add cauliflower; cook 2 more
min. Remove to large bowl; add eggs,
Parmesan cheese & sausage. Stir to
combine. Spoon into baking dish; bake 1
hour or until brown.
Chop the cauliflower into SMALL bits so they are between rice & pea-sized.0 -
