Zucchini ideas(other than breads and muffins) for kids?

All,

I've been searching the web for days looking for ways to prepare zucchini without battering and deep frying or making a bread of some kind that will go over with a seriously picky eater. The "kid" in question here happens to be 30 years old and rarely agrees to eat a vegetable that isn't smothered in cheese. (He is working on this, and there has been progress but it's a slow road.)

I'd love something that we can all eat but I'm allergic to wheat so baked goods are out (I don't do substitutes very often because I tend to lose my mind and eat it all in one sitting) and it seems that dairy and I cannot be friends anymore either. I'm perfectly fine with ideas that involve topping with cheese (I can leave that off mine) but ones that require a load of cheese mixed in are going to be tricky, because it he won't eat it it's up to me!

    Do you have to hide it? :flowerforyou: Puree it and put it in Turkey Meatballs. If they eat zucchini you could sautee it with tomatoes and put it on pasta.

    I know you mentioned no "breading" and "frying" but have you ever done a false fried veggie? Basically, cut it into spears (or chips, whatever you prefer), dip it in some egg whites, then a mixture of whole wheat bread crumbs and a little panko - maybe some parmesan as well, then bake it. I do this CONSTANTLY for my nephew and cousins and they all love it. I'll usually serve it with some marinara sauce to dip in.

    Is that courgette for us europeans? Its a great thickener! Peel it, boil it, blitz it in a food processor and added to whatever you want to thicken, its as good as potatoes in soup! :D

    Look into the cookbooks by Jerry Senfeld's wife... she puts veggies in everything and you might something that will work. I don't know about making it with your allergies, but it is worth a shot!

    Cut it into really thin strips and use it like spaghetti, you can even mix it 50/50 with spaghetti.

    Zucchini bread oatmeal! I like to grate zucchini and stir it into my oatmeal with walnuts and a drizzle of maple syrup on top

    This is one of my favorites, the flavor is really unique and savory. I use about half the butter it calls for and a whole lime, dried parsley works fine if you don't have fresh as well.

    Slice it lengthwise in quarters, spray a little olive oil on it, add S&P and roast it at 400 approx 20 minutes. Sprinkle parmesan cheese and pop under the broiler to melt and brown the cheese.

    Great ideas, thank you all! I can't wait to try them all.

    I know my mother bought herself Seinfeld's wife's cookbook (she and my husband have similar eating habits) but got grossed out just preparing the veggies....perhaps I can steal the book from her.

    I'm making "Dad Soup" today (I promise both of our dads are fully intact, alive and well) and I pureed a little zuc instead of using the tomato paste to thicken it up, we'll see how that goes!

    Love the idea of zucchini oatmeal (I'm an oatmeal freak!), and adding it to meatballs...I bet I could sneak those by real easy!
