Going gluten free?

My Naturalpathic Doctor suggests I try going gluten free for awhile. Problem is, I am a carbohydrate junkie. Any suggestions for good replacement foods for bread, cooking, crackers and the like?

rice flour!
loads of GF products out there...just very expensive! They don't taste quite the same either...0 -
If you have them in your area, Fresh & Easy has a lot of gluten free foods at decent prices. Try rice noodles, yum!0

I went gluten free (mostly) a few weeks ago. I was really tempted to reach for cookies and crackers for a while, but the foods I am eating without gluten are so filling, that I find the cravings have gone away quickly. If you are a pasta junkie, try some rice or quinoa. If you really need a cookie, make a chocolate flourless cookie. Beer lover? A try hard cider is gonna do the trick. You'll find that after a few days, its really not so bad.0

Well, unless you have a specific issue that you are trying to address (like celiac's disease), I don't understand why you would go gluten free. Nevertheless, I see GF products everywhere. I think it would be an easy transition. I buy brown rice and quinoa pasta all the time. I love rice noodles as in Thai food. You can easily find a GF version of just about everything, even bread, so it's a good time if you have to deal with this.

Find a health food store and you'll find GF versions of almost everything. It is expensive though, so you'll likely end up reducing the amount of carbs you're eating because of that. I've been GF for over 15 years. It's hard at first to get used to it, but the relief in the gut that comes with it is so worth it. Also, being GF eliminates lots of the "bad" things from your diet that you may have previously been tempted by - junk food, processed food, pastries (unless GF, but that's not what is usually set out at the office!).0
