Recipe Request - Homemade veggie burgers
I love me my daily veggie burgers. However the prices can vary, and sometimes the sodium is a little high. I've been told that they're easy to make (both tofu and black bean based), and not only cheaper, but healthier and tastier.
Recipies would really be appreciated! I'm looking to make large batches at once that I can freeze and reheat in a nuker. I've searched the net but most of the recipies are either quite complicated, or they don't look very good/healthy.

2 cups cooked lentils
1/4 celery cut into small pieces
2 Tb minced garlic
1/4 chopped onion
1/4 grated carrot
1/4 chopped mushrooms
1 cup cooked quinoa
2 eggs + 2 or 3 egg whites
Bake on parchment paper or lightly greased baking pan at 350 degrees for about 30 minutes
OR cook in a lightly greased, non stick skillet until browned
they will seem runny at first because of the egg, but the egg cooks and helps bind them0 -

Ok just looked up a few:drinker: ...now this one sounds yum, simple & they actually sound pretty yum-O they use regular garbonzo beans or sprouted ones.
I can dig up the Recipe Nutrition link so you can figure out how much each one would contain.

These make great do-ahead meals, and you can store shaped, ready-to-cook patties in the refrigerator for a week's worth of work lunches. Sprouted garbanzos are becoming more readily available, but if you can't find them, canned or cooked garbanzos (chickpeas) will work great. Sprouting boosts their already fantastic nutritional value even more...
2 1/2 cups sprouted garbanzo beans (chickpeas) OR canned garbanzos, drained and rinsed
4 large eggs
1/2 teaspoon fine-grain sea salt
1/3 cup chopped fresh cilantro
1 onion, chopped
Grated zest of one large lemon
1 cup micro sprouts, chopped (try brocolli, onion, or alfalfa sprouts - optional)
1 cup toasted (whole-grain) bread crumbs
1 tablespoon extra-virgin olive oil (or clarified butter)
If you are using sprouted garbanzos, steam them until just tender, about 10 minutes. Most of you will be using canned beans, so jump right in and combine the garbanzos, eggs, and salt in a food processor. Puree until the mixture is the consistency of a very thick, slightly chunky hummus.
Pour into a mixing bowl and stir in the cilantro, onion, zest, and sprouts. Add the breadcrumbs, stir, and let sit for a couple of minutes so the crumbs can absorb some of the moisture. At this point, you should have a moist mixture that you can easily form into twelve 1 1/2-inch-thick patties. I err on the moist side here, because it makes for a nicely textured burger.
You can always add more bread crumbs a bit at a time to firm up the dough if need be. Conversely, a bit of water or more egg can be used to moisten the batter.
Heat the oil in a heavy skillet over medium low, add 4 patties, cover, and cook for 7 to 10 minutes, until the bottoms begin to brown. Turn up the heat if there is no browning after 10 minutes.
Flip the patties and cook the second side for 7 minutes, or until golden. Remove from the skillet and cool on a wire rack while you cook the remaining patties.
Carefully cut each patty in half, insert your favorite fillings, and enjoy immediately.
Makes 12 mini burgers.

Homemade Black Bean Veggie Burgers
PREP TIME 15 Min
COOK TIME 20 Min
READY IN 35 Min
SERVES 4
INGREDIENTS (Nutrition)
1 (16 ounce) can black beans, drained and rinsed
1/2 green bell pepper, cut into 2 inch pieces
1/2 onion, cut into wedges
3 cloves garlic, peeled
1 egg
1 tablespoon chili powder
1 tablespoon cumin
1 teaspoon Thai chili sauce or hot sauce
1/2 cup bread crumbs (or crackers ... Ritz recomended)
DIRECTIONS
1. If grilling, preheat an outdoor grill for high heat, and lightly oil a sheet of aluminum foil. If baking, preheat oven to 375 degrees F (190 degrees C), and lightly oil a baking sheet.
2. In a medium bowl, mash black beans with a fork until thick and pasty.
In a food processor, finely chop bell pepper, onion, and garlic. Then stir into mashed beans.
In a small bowl, stir together egg, chili powder, cumin, and chili sauce.
Stir the egg mixture into the mashed beans. Mix in bread crumbs until the mixture is sticky and holds together. Divide mixture into four patties.
If grilling, place patties on foil, and grill about 8 minutes on each side. If baking, place patties on baking sheet, and bake about 10 minutes on each side.

Suggestions from others who've made recipe:
*Make sure you rinse the beans well AND dry them.
*Strain onion, garlic, and mixture to remove excess moisture.
*Add more bread crumbs/crackers
*Also, more had success with freezing them BEFORE grilling.0 -
