going apple picking-need ideas!

Happy Autumn Everyone!!!
to celebrate the season, I am going apple picking tomorrow, and I was hoping some MVP peeps would have healthier apple recipes. I'm thinking apple cobblers, apple crumbles, apple pie-type dishes, but any and all types of recipes are welcome!!

    Super-simple , at camp a guest left a ton of apples, and there was no way I coulda ate em all, I peeled and threw 8-10 in a crockpot/slowcooker with water, let them go all day til they were basically jam-textured then cooled and jarred them and used it as applebutter/spread whenever I wanted somethin sweet.

    If they're cooked too, they go great in apple/cinnamon oatmeal or blended into a smoothie.

    It's also great to sweeten and moisten baked goods (for healthier recipes).

    I made a giant batch of baby food the other day, one was with apples. I steamed them and then put them in the food processor with a little cinnamon. Wow...let's just say it was amazing. You could easily make this as an apple sauce and serve with some pork loin.

    Another option for apple sauce is dutch style. Depending on the apple variety, they need to be medium to soft fleshed apples. Simply chop up the apples, removing the core/seeds/stems, put them in a bowl with some cinnamon and lemon juice. Mix and then freeze. Once frozen (overnight) remove them, let them thaw and mash them up.

    The last one I'll recommend is caving out the center of the apple but leaving the bottom in it, as so it can hold a filling. Mix up some crushed walnuts, rolled oats (quaker old fashioned oatmeal), diced pear, sprinkle of cinnamon and a light drizzle of honey (or not). Put them in a baking dish and put just a little bit of water in the bottom and bake them at 350 until soft and aromatic.

    *If treating yourself, the last one above goes great with a scoop of Kemps Frozen Yogurt.

    What about apple sauce, some kind of dip (not candied or caramel or chocolate), fruit salad.

    If you get a whole chicken you can stuff it with diced apples and onions, season with rosemary, thyme, marjoram or savory and pepper in the oven at 425 for 120 min. The first 75 min with foil on and the last 45 with foil off. Just like a normal chicken.

    Baked apple crisp with 1/2 nature valley granola bar and a spray of butter spray for each apple used. I don't use sugar, butter or flour. Just apple and granola. Cover when cooking and cook until apples are tender about 30 min.

    Slice and put apples on a sheet pan and freeze. After frozen put in single serving bags and use through the winter for apple sauce or baked apple crisp.

    Mom's Apple Crisp (Weight Watchers)
    Ingredients

    o 1/2 cup all-purpose flour, plus 2 Tbsp
    o 1/2 cup old fashioned oats ( not instant)
    o 1/4 cup packed brown sugar
    o 1/2 teaspoon ground ginger
    o 1/4 teaspoon cinnamon
    o 1 pinch salt
    o 3 tablespoons light stick butter, diced
    o 1 teaspoon water
    o 1/4 cup granulated sugar
    o 1/4 teaspoon ground nutmeg
    o 1 pinch ground cloves
    o 3 lbs of apples, peeled and thinly sliced
    o 1 teaspoon vanilla extract

    Directions

    1. Preheat the oven to 375°F Spray a shallow 1-1/2 quart baking dish with nonstick spray.
    2. To make the topping, combine the 1/2 cup flour, the oats, brown sugar, ginger, cinnamon, and salt in a medium bowl. With a pastry blender or 2 knives used scissor-fashion, cut in the butter until the mixture resembles coarse crumbs. Add the water and firmly press mixture to form clumps.
    3. To make the filling, mix the granulated sugar, the 2 tablespoons flour, the nutmeg, and cloves in a large bowl. Add the apples and vanilla; mix well. Transfer to the baking dish. Sprinkle the topping over the filling. Bake until the filling is bubbling and the topping is golden, 55 - 60 minutes. Serve warm or at room temperature.
