This is a pretty authentic recipe for chana masala (not curry) but just one thing to make it better - brown the onions (low heat for a while) and then puree them using an immersion blender. Then add the ginger and garlic and brown all of it together, then continue with the recipe. I also probably use more of all the spices - I don't measure but our food is generally very flavorful, you can't have too much of the spices . I would DEFINITELY use more ginger and garlic, maybe 5-6 cloves or garlic and 1-2tbsp of ginger.
To make this chana (chickpea) curry, add tomato paste instead of tomatoes, and like a cup or 2 of water. Simmer that for a while and serve over basmati rice or with roti.
