Building a recipe, question

I'm making Black Beans and Rice. I have a Ham Hock in while it simmers, and will remove it before serving.
When I add all ingredients in the database, the ham hock adds X number of calories.
How would I accurately measure how many calories after I remove the ham hock? Or should I just build the recipe as if we are eating the ham hock?

That is a really good question, because i'm sure some of the fat from the Ham Hock is what is making it taste to good... . I don't really know, but if it were me I would assume a 4th of the calories of the ham hock remained, but that's a total guess.
Maybe there is a recipe similar to yours on all recipes.com or something? Where they remove the ham hock and then have the final calorie count listed... so you can get an idea of the percentage of the ham hock you should include in the recipe?0 -
I would add it as if you ate it. Since you cooked it in the recipe, it has all the fat and sodium.0
