First off... you don't WANT to be under what MFP recomends for you to eat.
You also want to make sure you are keeping a decent balance between your groups (proteins, fats, carbs, etc). If your fats are high, it means you are eating too many fatty foods. Even healthy fats are still fat, so you want to limit them but not exclude them (as a matter of fact they are the BEST type to get in).

I totally understand finance crunch. Do what you can with what you have.
When you do have a little money, invest in canned veggies, fruits (in juice), whole grain dried pastas, if you have a sweet tooth Jello products, etc. Frozen stuff is good too stir-fry veg, fruits, veg, etc. That way you have a healthy-ish stash for when things get tight. Fresh is best, but it can be costly.
  • I don't worry too much about being under my calories (though 500 is probably a bit much). Fat probably isn't the best category to be over in but the main thing is making sure you stay within your calorie limit.

Just remember you can stop losing weight if you got too far under... trust me that's always been my issue.

that was my problem at first. the very fist day i think i was 700 under but already at max fat grams and carbs. if you have greens in the house a bowl of greens with lemon juice and pepper.
it took a bit of work but I am usually ok now.

what do you have on hand maybe we can help you plan a lowfat meal for dinner

I just switched around my menu, beef stroganoff with mashed potatoes and 1/3 cup of corn with 1/2 tbsp of margarin... and now I am down to 89 calories under, 90 carbs under, 19 fats under, and 16 protein under... if i can think of a snack it might be near perfect =p

    What do you think?

    Dinner:

How about a small piece of chicken breast and a big side of veggies with a salad with Balsamic Vinegrette Dressing - blend some fruit in the vinegrette. Add some fresh fruit to your salad. Some low fat dairy. You want to concentrate on variety. You need protein to feel full, so chicken breast or turkey breast with no skin are good meat choices.

It is a learning process. Don't sweat the small amounts of fat you will go over. Until you get familiar with food combinations you like, that will happen. It's okay! You've learned something today.

Log food in the morning for the whole day. That is really helpful. :flowerforyou:

if it were me I wouldprobably grill the chuck steak. make the brown rice add peas , bell peppers and onions to it with some garlic powder. you could also good the ground beef rinse it with warm water to get some of the fat off (dont know if that works it's just what I do) aadd the corn and the peas and maybe even the bell peppers and a little tomatoe sauce. serve it over brown rice. I'd be happy

eta- oh or if you had eggs and just did the egg whites in an omlette with the veggies. it would rock and be way yummy. and super low fat
