ITake 1 multigrain Wasa Cracker, top with 1/4 c Ro-tel tomatoes (diced tomatoes with green chile) and cover with 1 oz thinly sliced reduced fat pepper jack cheese. Nuke for 40 seconds and top with 1/4 of an avocado, sliced.
It is 205 calories. You could halve the cheese to save 35 calories if need be, but for me, the cheesier the better! This is SO good! The avocado helps tame some of the heat. You could make 2 of these and have a salad or steamed veggies with it for a great dinner.
