Mini Yogurt Cheesecake Pie - 240 calories

I just wanted to make something that looked more like a treat/dessert than just cheesecake flavored yogurt.

At first, I was still disappointed that it was so high in calories. But then I realized it still saves about 100 calories compared to "most" cheesecakes. I did find some that were lower, but I think the serving is smaller too. For example, Sara Lee's frozen 8" cheesecakes had less calories...but then again, your getting 1/6 of a 8" round...and this way bigger. Sodium is still much higher than I'd like...but I don't think there is a way around that since the majority of the sodium came from the cheesecake pudding mix.

Serving - 1 pie (this is about the size of the palm of your hand, so its pretty big.) Though I think this would taste even better with some caramel drizzled on top! *drool*

Calories: 243 ............ Carbs: 34 ............ Fiber: 0 ............ Fat: 6 ............

Protein: 13 ............ Sugar: 16 ............ Sodium: 511


Ingredients (makes 4 pies)

1 - box sugar free fat free cheesecake pudding mix

1 - pack keebler mini graham cracker crusts (comes w/ 6 crusts)

1 - 4 pack of Oikos vanilla Greek yogurt (4oz each package)

( Splenda & Vanilla Extract optional )

2-3 packages Splenda

1-2 drops vanilla
Directions

1) Mix 1/4 (about 1 1/2 tbsp) of the cheesecake mix into one 4oz container of yogurt. (also mix in vanilla & splenda if you want to)

2) Spoon the whole container into one crust, gently spread and mold to make it look like a pie. Do steps 1 & 2 for other 3 containers.

3) Take one extra pie crust and crumble it, use it to top the 4 different pies.

    Thanks a MILLION for this recipe - I made it tonight and loved it!

    The only thing I think I will change for future batches is to omit the Truvia I added.. it made it a tad too sweet for me. That and I might add in a little pumpkin pie spice to shake things up a bit :)

    I finally tried this last night - I picked up the mini pie crusts and cheesecake jello filling at the store, but I accidentally picked up the 'regular' instead of sugar free, and forgot to get the yogurt that was recommended by OP. So I substituted what I already had in the fridge (used 1 Yoplait fat free plain greek yogurt - 120 cal - and 2 Archer Farms strawberry banana fat free yogurts - 80 cal each). OP's recipe called for a total of 16 oz of yogurt, I used 18 oz b/c each container was 6 oz. I mixed the 3 yogurts together in a bowl along with the jello cheesecake mix. Tasted it and it was *delicious* so I didn't even add the extra sweetener or vanilla! It looked like a lot, so I actually filled 5 of the pie crusts and then crumbled the 6th over the top, making 5 totally adorable little desserts instead of 4. Don't know what I would have done with a leftover pie crust anyway. LOL

    Anyway, my substitutions made 5 cute little nicely filled pies at 268 calories each. The numbers would have worked out better if I hadn't accidentally grabbed the 'regular' jello cheesecake mix (the regular is 400 calories for the package whereas the sugar free is only 100 calories for the whole package). I figure with the sugar free they would have been 208 calories each (making 5). If I'd used 3 of the 'regular' (not greek) yogurts in addition to getting the lower calorie sugar-free jello mix, they would have been exactly 200 calories each (again, making 5 instead of 4). So next time (i.e. in a couple of days LOL) I'm going to do that and see how it works out. There are a bunch of different flavors of that 80 calorie Archer Farms yogurt at my Target too, so I can't wait to play around with the flavors. I believe the pumpkin pie yogurt is calling my name in this recipe..... :-)
