Mushrooms go really well with the earthy taste. I'd make a pilaff with some good quality shallots and garlic, chestnut mushrooms, plenty of flat leaf parsley to finish, and maybe even a sprinkle of pine nuts, toasted to bring out their flavour.

I sautee some onion in a little olive oil and then throw the quinona in with it and sautee it til it is brown. Doesn't take long. Then I cook it with vegetable broth and while it is cooking I add chopped fresh spinach and zucchini.

Once the broth cooks out of it I will then add fresh chopped tomatoes cucumbers, and red pepper. Then throw a little greek dressing on it and it is great!

Yum - sounds delish. I usually make my quinoa with diced, roasted veggies and then make quinoa cakes the next day using the leftovers.

  • I found quinoa flakes. I mixed them with almond milk and a little stevia and warmed it up in the microwave. Great for breakfast.

I made it for the first time last night. Cooked it in low sodium chicken broth and added broccoli, cauliflower, green beans, onions, peas, carrots and sodium free chopped tomatoes. I will make it in place of rice and in soups from now on.

I seen a recipe where you could use Quinoa in place of pasta in pasta salad. Cherry Tomatoes, cucumber, black olives, fresh broccoli, green and red peppers and parsley in an Oil and lemon dressing.
