KELLY'S BLACK BEAN AND TURKEY TORTILLA SOUP
Serves 15 (2/3 cup)
Ingredients:
1 ½ cans of refried black beans
8 ounces frozen summer squash
1 can stewed tomatoes
4 cups chicken broth
2 pounds extra lean ground turkey
3 tablespoons chili powder
3 tablespoons cumin
4 cloves of garlic, chopped
1 red onion, chopped
A dash of cayenne pepper if desired
5 whole wheat flour tortillas
Directions:
Spray a skillet with non-stick spray. Over medium heat, add the garlic and onion. Sauté until the onion is transparent. Add the ground turkey and brown. Place all ingredients except the tortillas in a slow cooker and mix well. Simmer on low for 5 hours or on high for 3 hours. Cut tortillas in strips and add to cooked soup. Cover and simmer for 10 more minutes. Garnish with fat free cheese and plain Greek yogurt if desired.

Sounds good and I can see lots of variations in there. I would add some bell peppers, maybe some onion. I'll probably toast the tortilla and put it as a garnish on top.
