I'm actually eating these now as dinner while typing this. So good! (Sorry, my cell phone's no good for food photography.)
CALORIES: 48 per stuffed egg-half
(388 total)
INGREDIENTS
4 large eggs
1 packet sweetener (I used stevia)
2 tsp. mustard
1 slice cotto salami (I used the regular 'Bar S' brand slices for sandwiches)
1/2 oz. sharp cheddar cheese
1 green onion/scallion, chopped (scissors are perfect)
Dash cayenne
Dash nutmeg - trust me on that
DIRECTIONS
1. Prep eggs as you normally would for deviled eggs, discarding the yolk from one whole egg.
2. Mix everything (but the empty, halved whites) well in a bowl and stuff the eggs with the mixture.
3. Cover and refrigerate to chill.
4. Om nom. ♥
