a yummy low fat/calorie banana bread recipe

4 ripe bananas
1 cup splenda, granulated sugar....must use this type of splenda, doesn't work with the packet type
you can also use half granulated sugar and half splenda, or all granulated sugar.
1 tablespoon low cal margarine
2 tablespoon unsweetened applesauce
1 tsp vanilla
1/2 tsp baking powder
1 tsp baking soda
1 1/2 cups whole wheat flour
1 egg, OR two egg whites will also work, if you don't want to use the yolks
I add 1 cup of chocolate chips
you can add, nuts, raisins, cranberries, whatever you like
mix it all together, no need to do it in stages, this is an easy recipe,
line your pan with parchment/foil/cooking spray
bake at 350 degrees for 50-55 minutes
this recipe makes 12-14 slices at 131 calories a slice and less then 2 grams of fat per slice.

    And banana bread freezes very good. So for anyone who doesn't think they want to eat a whole loaf. Slice it and wrap the slices individually and freeze. They thaw pretty quick for those days you're looking for a quick snack or something different for breakfast.

    lol....it does freeze really well, I just made this around noon today and it took my kids about 10 minutes to eat an entire loaf, I was hoping for lunch snacks for tomorrow out of it, looks like I need to make another loaf...it never quite makes it to the freezer, my daughter wants you all to know that she likes it when I make it with raisins and pistachios =], but my little ones have to have the chocolate chips, i've even added cocoa to this to make it a chocolate banana bread with choc chips, very yummy, this recipe seems to be very forgiving!

    Enjoy those kiddos while their home! Mine are both gone now so the freezer is my friend. I like to make cookie dough. Make it into balls & freeze. After they're frozen put into ziplock bags. When I want a couple of fresh cookies I take them from the freezer and bake. They might have to bake a few minutes longer. But then I have hot fresh cookies. But be careful the frozen balls disappear from my freezer! DH loves them and so did my youngest DD when she was home.
