Simple veggie soup

I just made a really good vegetable soup very low in calories per serving. I actually enjoyed eating it and wanted seconds but I didn't. I know veggie soup is common but I'm just excited to have enjoyed such a healthy, low calorie meal different from a salad. In case there's someone left in the world without a good veggie soup recipe, here's mine (it's not vegan, though):
* 1 white onion, chopped
* 3 garlic cloves, chopped
*1/2 cup coriander leaves, chopped (you can substitute with parsley if not available)
* 1 tbsp olive oil
* 5 cups frozen Normandy Mix Vegetables (broccoli, cauliflower, carrots)
* 1 chicken bouillon cube (you can substitute with veggie broth or veggie cubes)
* 5 cups water
* 1/4 cup sour cream
* salt
Sautee the onions, garlic and coriander leaves in olive oil until onions are translucent. Add the frozen vegetables and stir until they begin to defrost. Then, add the bouillon, the water and some salt. Stir and cover until it boils (about 10-15 min). After it comes to a boil, reduce the heat to low and simmer covered for ~20 min. Uncover and simmer for another 15-20 min or until liquid has reduced to ~2/3 the beginning volume. Turn off the heat and puree with an immersion blender or regular blender or food processor. Once pureed add the sour cream and mix well. Taste and add salt if needed (and pepper if you like. I just can't eat it.).
It yields 4 servings; ~115 calories/serving.

You had me up until the sour cream. lol Does it actually help the flavor? (I know it is amazing in chili, but never thought of it in veggie soup). Or is it just to thicken it up? It sounds like you could be super creative with the veggies and even use vegetable broth, or beef broth, or throw a handful of whatever leftover meat you have in the fridge! (I love making up new recipes lol)0

Such a small amount of sour cream doesn't really thickens the soup, it just gives it a little creaminess and a subtle tangy flavor that I very much love. You can always substitute for some heavy cream and get a similar enhancement. And if you add a few chicken drumsticks... total savory goodness!! I get excited when I enjoy a low calorie meal so much... I'm such a dork!0
