Less Fat, More Calories

My main goal is to drop body fat, maintain current weight and increase fitness level. I'm an avid cyclist looking to get ready to participate in the early race season again this coming March. So my exercise routine is usually at least 30min of riding a day. Not a casual ride but a hard workout > 18mph avg with hills. My weight has come down a bit over the summer and I've definitely noticed a change in body fat and I'm having a hard time balancing everything out.
Overall, long story short, I'm finding it difficult to balance my diet to keep my carb intake up to balance with my exercise routine and reduce my fat intake.
Any pointers??
