I'd turn the oven up to 400... spray a cookie sheet with cooking spray lightly lay flat potato slices then spray lightly with more cooking spray...sprinkle lightly with salt (or other seasoning).
Pop in the oven for about 10-15 minutes (guesstimate there, depends on thickness of slices) then flip and cook til crisp.

    That's how I'd do it.

Ooh, my husband does this, and they're gooood!

Slice the potato as thin as you can. (One of those vegetable slicers would be perfect for this.)
Brush them with a little bit of olive oil. You could probably substitute a low-fat cooking spray if you wanted to.
Season to taste with salt and pepper. He's a chilihead, so he likes to add drops of hot sauce here, too.
If you have a sandwich press or Foreman grill or something, use that to press and cook the slices. If not, you could probably just cook them on a regular flat cooking pan and flip them individually once they're brown and crispy on one side.

It takes a while to do and I have no idea what the nutrition info is, but they're really yummy!

I use a potato peeler to slice mine uber fine (works great with cheese too).

I've never tried baking them though, always deep fried (which sooo will not fit into my new healthy lifestyle!). Thanks for the idea!
