Pumpkin Protein Pancakes

Delicious, filling and easy!

1 cup egg whites or liquid egg white substitute
1 cup of old fashioned oats
1 cup of lower sodium cottage cheese
2 scoops of vanilla protein powder (Oh Yeah! is my favorite brand)
1/2 cup of Pure Pumpkin
Pumpkin Pie Spice to taste (optional)

Use a stick blender to mix all ingredients to a batter consistency and cook like pancakes.

The calories in each depends on how big you make them. This amount makes anywhere from 8-16 depending on size.

    bump,sounds great. wonder if they would taste okay with hemp protein instead of flavoured protein. I may have to make a small batch and test.
