Vegan/Gluten Free

Im staying at my mates house over the next few week's. She's a Vegan. & i have celiac disease which means I cant intake wheat/Gluten.

What should we cook for dinner which is both gluten and vegan free. besides veggies & such. we have a few idea's, but what are some of yours?

    im vegan and i eat a lot of gluten free food, just happens to be that way, i dont have celiacs, and you are more than welcome to look at my diary.

    Lentils are high in protein and fit you both. Black Beluga have the highest protein I've found to date!

    Stir fry with tofu and rice noodles.

    Potatoes, sweet potatoes.

    Um ... tortilla chips and salsa.

    No fake meat. Lots of veggies, gf pasta, you can make gf pizza with vegan cheese, sub the eggs for oil or apple sauce. I'm celiac and I have a casein allergy, feel free to hit me up for food ideas. I promise, it's not as limiting as you'd think.

    Watch out for the wheat/gluten in certain brands of tofu.

    Lots of quinoa based dishes. Legumes. Roasted veggies and/or squash.

    Try making a fresh tomato and spinach sauce and serving it with wheat-free pasta?
    Root veg curry with rice.
    Ratatouille with baked sweet potato.
    Home made potato wedges with roast veg and salad.
    Risotto or paella.
    Roast butternut squash or pumpking filled with cooked spelt or barley mixed with vegan cream cheese and herbs.
