end of the season green tomatoes

i picked the last of the tomatoes off the plant this morning. it is getting too cold and i don't want to lose them to frost. they are all green and very hard. i plan on putting them in a brown paper bag in the windowsill to ripen.
any other suggestions how to ripen them? any recipes for green tomatoes (salsa, fried green tomatoes, etc)?

Putting them in a paper bag with a banana might help, but if they're quite far off being ripe they'll probably not ripen now.
