Breakfast help...

I will be attending a meeting with all of my department early in Feb - all men.

We will be preparing breakfast at the condo - I would love to be able to bring something that I can heat up in the morning that everyone would love for 2 reasons.....I don't want to be stuck with srambled eggs bicuits gravy bacon and waste 5000 calories and I would love to show them that healthy options can taste yummy too.

Any suggestions for a breakfast type casserole, quiche or the like that you've tried and love would be great!

    Hoping for something I can make at home and reheat at the meeting...sorry I wasn't clear

    or at least "assemble" at home to throw in the oven at the condo

    Easy Brunch Strata - 4 Points

    Amount Measure Ingredient -- Preparation Method


    16 slices white bread -- crusts removed
    3 cups egg substitute
    2 cups skim milk
    1 tablespoon Dijon mustard
    1/4 teaspoon black pepper
    1/2 pound turkey sausage -- cooked and crumbled
    2 cups 50% reduced-fat Swiss cheese -- shredded
    1/2 cup vegetables
    such as broccoli florets, sliced green
    onions and chopped red pepper -- optional
    paprika -- optional

    1. Preheat oven to 350 degrees F. Coat a 13 x 9 x 2-inch baking dish with no-stick cooking spray.

    2. Arrange bread overlapping in bottom of baking dish.

    3. Combine eggs, milk, mustard and pepper. Pour half of egg mixture over bread; sprinkle with sausage, cheese and vegetables, if desired.

    4. Add remaining egg mixture. Sprinkle with paprika, if desired. Bake 25 to 45 minutes or until set and golden brown. Let stand 5 minutes before serving. Makes 12 servings.

    * Strata may be covered and refrigerated overnight before baking.

    Easy Breakfast Casserole

    (Makes 4 servings)

    Take the stress out of entertaining with this great do-ahead dish for your next breakfast or brunch get-together. Our Easy Breakfast Casserole can be made 1-2 hours ahead or even the night before. Also, the recipe can be doubled easily for bigger crowds. Experiment with other vegetables such as sliced mushrooms or chopped tomatoes and/or other fresh herbs.

    2 cups crusty white bread, cubed (substitute light bread)
    3/4 cup shredded Swiss cheese (substitute 2% or fat free)
    4 eggs, lightly beaten (substitute egg beaters)
    11/2 cups fat free (skim) milk
    2 tablespoons chopped scallions (use both green and white parts)
    1/4 teaspoon salt
    1/8 teaspoon Worcestershire sauce
    2 tablespoons diced roasted red bell pepper
    2 slices cooked bacon, chopped (substitute turkey bacon or turkey sausage)
    2 teaspoons chopped fresh basil
    Pepper to taste

    Grease 8 x 8 inch baking dish.* Arrange bread cubes on the bottom of dish and sprinkle with cheese. Mix together eggs, milk, scallions, salt and Worcestershire sauce. Pour mixture over bread and cheese. Sprinkle with red pepper, bacon and basil. Season with pepper. Cover and refrigerate for 1-2 hours or over night.

    Heat oven to 325 degrees. Bake 50-60 minutes until top is golden and eggs are set. Cut in four squares and serve.

    *If doubling recipe, bake in a 9 x 12 inch dish.
