Don't like squash?

I really hate the taste of squash. Always have.

But last night I baked a whole SPAGHETTI squash in the oven, scooped the seeds out, shredded it to make 'spaghetti' and topped it with some low sodium pasta sauce loaded with veggies. YUM!!

This squash is mild tasting, and after you put the sauce on you can't taste it at all. And it's good for you!

Just had to share.

Other veggies I wouldn't eat before but now do:

Broccoli - puree for dips or make a soup
Cauliflower - mash up like potatoes. Add a small dollop of cream cheese. A few bacon bits if you can afford the fat & sodium.
Mushrooms - dice them up small and 'hide' them in spaghetti sauces, meatloafs, pizza, etc.
Brussel sprouts - Use the '60 second recipe' WAY better than boiled and super easy. If you can't find it on google ask me and I'll post the recipe.

If you aren't a fan of veggies, but have discovered a different way to prepare them that you enjoy, please share!

    I baked it for 1 hour at 350. Be sure to poke holes in it all over so it doesn't explode.

    YEah I usually cut it in half short ways, then bake a 375 for 45 minutes. It IS delicious, but packed with fiber so it makes you gassy haha.



    It is good stuff, and just as cheap as spaghetti.
  • I made zucchini lasagna for my family this week and they loved it. I just sliced the zucchini really thin and used it in place of lasgana noodles in the traditional recipe (plus used low fat cheeses). It's a little more watery, but still good.

    If you've tried squash and didn't like it make sure you get your hands on a heritage breed squash rather than the current commercially available ones.... that are surprise surprise 'bred' for shelf stability of the skin rather than taste! Try different squash if you didn't like one, try them cooked different ways. Squash is very under-rated!

    I hate how bland brown rice is so I put some steak sauce on it to give it more flavor while still being healthy. A1 sauce is extremely low in cals.

    Thanks! now that I've found one I like, I feel braver about trying others. Will have to visit my local farmer's market this weekend!

    Mmmm, I love squash. All kinds. Summer squash, zucchini, butternut, acorn, spaghetti, whatever. I love 'em.

    I'm from England, anyone know an alternative name for spaghetti squash? We have butternut squash over here but I don't think that's the same thing and I'd love to try this! I've stopped eating real spaghetti because of the calories and this seems like a great solution.

    actually you can cut in two prior to cooking -- scoop out the seeds face down on a baking sheet and cook. use a fork to scrap out the spaghetti threads -- an amazing veggie

    I like to cook it in stock and spice it up with Mrs. Dash seasonings. Once I made some cooked in chicken stock and accidentally spilled a LOT of Mrs. Dash garlic & herb seasoning it it. When I served it my husband said "I thought you didn't like those pre-packaged rice mixes because of the sodium".

    There was no salt at all in the seasoning or the stock but it really did taste like an Uncle Ben's or Minute Rice type mix that are loaded with sodium.

    carrot soup boil carrots and I put in a yam when soft blend in blender to thin it out i added a little milk then when served put a dolip of sour cream on top yummy I just used water to boil in but you can use broth. Im now making butter squash soup cross your fingers
  • I made spagetti the other night sing spagetti squash instead of noodles and it was so good! My husband and children even scarfed it down. IT's my new fav!

    You can microwave the spaghetti squash, too. Cut it in half down the long middle and cook till soft to a fork's touch. It's usually about 20 minutes but microwaves vary.
