Taco Soup- EASIEST RECIPE EVER!!!!!!!!

This is a crockpot recipe. I use all low sodium stuff and ground turkey and it is so delicous!

1cn white corn
1cn black beans
1cn kidney beans
1cn ff pinto beans
1cn diced tomatoes
1cn rotel
1 to 1 1/2 lean ground beef (or turkey)
1 packet taco seasoning

1bag ff cheddar and ff sour cream if you like for topping

brown meat in skillet. Then add all cans including liquid in crock pot, add meant and seasoning, stir well. Cook on low up to 8 hrs. Top w/ cheese and or sour cream and serve in bowls

    Mmm... sounds good! I don't see any liquid (besides bean liquid) - so is it very "soupy" or more like chili?

    I have been using this recipe for years--love it! When possible, I use dried beans and cook them myself and use fresh or frozen corn. I also get the lower sodium taco seasoning. It's a great tasting soup but the sodium is horrible when I use canned corn and beans and regular seasoning.

    It's soupy. The liquid from the beans, corn and Rotel keep it from being thick like chili.

    However, when I make it using dried beans and fresh/frozen corn I usually add a little water and another can of low sodium tomatoes to make it soupy.

    Another way to control the sodium is use your 'own' taco seasoning

    1 tablespoon chili powder
    1/4 teaspoon garlic powder
    1/4 teaspoon onion powder
    1/4 teaspoon crushed red pepper flakes
    1/4 teaspoon dried oregano
    1/2 teaspoon paprika
    1 1/2 teaspoons ground cumin
    1 teaspoon sea salt
    1 teaspoon black pepper

    I dont have the values cuz it depends on what you use. The dried/frozen stuff is def best, but in my crazy *kitten* life the canned low sodium works great in a pinch!:wink:

    without cheese and based on 8 servings

    Cal: 310 per serving
