Pineapple Chicken with Mango Salsa

Spicy Mango Pineapple Salsa
1 mango, peeled and diced
1 can crushed pineapple, drained (save the juice!)
1/2 red onion, diced
1-2 jalapeno, seeded and diced
1/2 red pepper, diced
1/2 bunch of cilantro, cut (just need the leaves)

Mix together and serve! It's seriously that easy and so delicious! I ate the leftovers with tortilla chips!

Hawaiian Chicken
4 chicken breasts
juice from crushed pineapple
couple dashes of soy sauce (or teriyaki)
couple dashes of Worcestershire sauce

Marinate chicken for at least 4 hrs. Then grill, broil, or pan fry. Top with mango salsa and enjoy!


**I made this recipe this week and it was a big hit! I doubled the salsa recipe and used some of it the next day with baked tortilla chips. Delicious!

    It's really good. I made another batch of the salsa this weekend and served it with broiled Tilapia and steamed brown rice. Yumm-o! :love:
