White veg and sage soup

This made a very warming lunch today!
5 generous portions - 148 calories a portion

2 large onions chopped
1 head of cauliflower broken into small florets
1 can white beans
4 leaves fresh sage (chopped small)
4 teaspoons 'marigold' powdered vegetable stock (or a stock of your choice - of course)
150g potato (diced)
water
1 tbsp butter or olive oil

Soften the onions (gently) in the oil for 5 mins. Add the cauliflower and potato and the stock. Simmer gently for 15 mins (until the veg is soft.

drain and rinse the beans. Add these and the sage to the veg and warm through.
Blend all to a smooth texture and add water to thin to taste. (Or blend half and add to the remaining soup for a rougher effect)

Mmmm central heating for the soul!

    This looks excellent! I love soup, and I'm inordinately fond of beans. I just cooked some cannellini beans this morning too! I'm going to puree them with some roasted butternut squash and beef stock since that's what I have on hand. Too bad I don't have any fresh sage, though... I'll have to get my mother to split her plant before winter gets here!
