Chewy Almond-Cocoa cookies
I had these at my mom's house yesterday. She's gluten-free and has been playing around with recipes. These were DIVINE. There's a higher-fat, higher-cal, higher carb, lower-protein version if you would like that instead. This is her recipe tweaked by moi. (Hers uses agave nectar, more chips, more almonds, no protein, and more oil).
Chewy Almond-Cocoa cookies
2 c. raw almonds, ground fine into meal
1/4 c. Special Dark cocoa powder
1/4 c. regular cocoa powder
1/2 tsp. salt
1/2 tsp. baking soda
1/4 c. extra light olive oil
1/4 c. unsweetened applesauce
1/4 c. Stevia powder
1/4 c. honey
1 T. pure vanilla extract
1/3 c. Ghirardelli chocolate chips, chopped
1 scoop protein powder
Combine dry ingredients together, and in a separate bowl combine wet ingredients. Stir wet into dry until moistened and drop by generous Tablespoonsfull onto greased cookie sheets. Bake @ 350* for 7-9 minutes.
Makes 30
Per Serving: Calories: 87 Carb: 7 Fat: 7 Pro: 3 Fiber: 1 Iron: 4
Perfect treat to have around the house this weekend, have it with a protein shake, after a meal, or pre- or post- workout! :bigsmile:

I have no idea of the weight of almonds. Let me look on my Sunkist container... 1/4 c. almonds is 30g, so........ 240g almonds. You can buy almond flour, blanched; almond meal, or, just grind up some raw almonds like I did. Just get your nuts in there! haha. My protein powder is Designer Whey vanilla, it's 100cal and 18g protein per scoop (about 2 T.?). I buy it in bulk. You can omit this if you like; I only added it for the extra punch, to make me feel better about eating chocolate :-DWhat's the agave recipe? I usually have agave on hand but not stevia.
