Spices for pulled chicken?

I'd like to make some pulled chicken in my crockpot and season it Mexican-style for chicken tacos - what would I use? I have only ever made ground beef/turkey Mexican style and I use a pre-made mix... but I'd prefer to do this one myself with just spices and eleven pounds of sodium in it. Or is there a sauce I can pour over the chicken while it's cooking? Nothing crazy spicy, my boyfriend doesn't like tons of heat.

depending on what part of the country you are buy some frozen red chili OR buy fresh red chilis and puree them with a little water and salt and pepper. OMG that sounds sooo good. Im from NM and we put chili on EVERYTHING!0

Adobo seasoning. if you can find sazon seasoning, that's the best. If nothing else, poultry seasoning along with some paprika, cumin, & cilantro (a tiny bit of curry powder is good too)0

Add this, Fresh chopped garlic, Fresh Cracked black pepper and 1 tsp of Mesquite Liquid smoke and let sit for 4 hours.

Found this on here in the forums and loved it. You can use Mild salsa if you don't want it to be spicy.
Slow Cooker Mexican Chicken
Number of Servings: 6
Ingredients:
4 boneless, skinless chicken breasts
1 cup salsa
1 package reduced sodium taco seasoning
1 can reduced fat cream of mushroom soup (condensed)
1/2 cup reduced fat sour cream
Directions:
Add chicken to slow cooker.
Sprinkle taco seasoning over chicken.
Pour salsa and soup over chicken.
Cook on low for 6 to 8 hours.
Remove from heat and stir in sour cream.
Serve with rice. (I have also used it on nachos, in enchiladas, as filler for soft tacos....)

Lower Salt Taco Seasoning
Ingredients
4 teaspoons cornstarch
2 teaspoons mild chili powder
2 teaspoons ground cumin
2 teaspoons salt free beef bouillon granules
1 teaspoon dried mincedonion
1 teaspoon dried granulated garlic
1/2 teaspoon salt
1/2 teaspoon granulated sugar
1/8 teaspoon ground cayenne
Directions
Mix all ingredients in a small bowl. Transfer to an airtight container and keep in a cool, dark cabinet for up to 2 weeks

Just some salsa mixed in with the chicken makes really good tacos! It's good to drain the chicken after it's cooked, shred it, and then add salsa. Heat until warm.0
